Many people ask how I am able to get through medical school with a chronic disease that requires cooking all of my own food, self-care, and more. The answer is my mother. Even though she lives 2.5 hours away, she always makes sure my freezer is stocked with these AIP turkey patties, cooked chicken, and butternut squash soup. These turkey patties are simply flavored with garlic and onion, so they pair well with virtually any sides. I will often eat turkey patties with butternut squash soup, steamed veggies, stir-fries, sweet potato, eggs, and in salads. One minute in the microwave, and these babies are ready. Or I’ll defrost them overnight for lunch the following day.
